A few weeks ago I shot a fun assignment for Chicago Magazine on Slagel Family Farms. If you eat out in Chicago you’ll often notice the Slagel name on the menu at many restaurants in town. They’re located two hours away out in Fairbury, Illinois and are known for humanely raising organically fed animals. The popularity of Slagel Farms in the last few years is largely based on the hustle of Louis John Slagel, a 29 year old who took over the farm from his grandparents back in 2007. I spent an afternoon with Louis out at the farm then met up with him the next morning to catch him doing deliveries at the Publican & Little Goat in the West Loop.
